Ingredients

- 250 g of type 00 flour
- 250 g of type 0 flour
- 250 g of (room temperature) water
- 40 g of olive oil
- 7 g of dry yeast
- 15 g of sea salt(fine)
Preparation
60 minutes
Mix the flours with the sugar and yeast. Add the water and the oil and start kneading. When the dough is smooth, add the salt and knead vigorously for another 2 minutes. Make a ball and let it rise for 20 minutes in a bowl covered with plastic wrap in a warm area such as an oven with the light on .Now knead for another 2 minutes to give more strength to the leavening and let it rise until doubled. Now it’s time to put it in the pan, make an emulsion of 3 tablespoons of oil with 3 tablespoons of water and distribute them on the surface and let rise for half an hour. Now preheat the oven to 200 degrees, add coarse salt on the surface (also green olives, rosemary, onion slices to taste) and cook for about half an hour. Enjoy your meal!
